During my 3-month stint in Las Vegas for the “Ultimate Fighter Live” TV show, one of my primary responsibilities was to monitor the nutrition of UFC champion Dominick Cruz. We lived in a condo together so I bought and cooked all the food in the house. His favorite breakfast was an omelet so I thought I would show a quick “omelet making” clip. The omelet always included a number of vegetables and I would change up the meat and any sides just to keep things fresh. This was filmed last summer (2012), however, since I’ve been unable to shoot any new exercise content due to the lingering (though improving) injuries, I thought I should pull a couple clips from the “archives”. I have a ton of footage from last year that I need to edit and get up…a work in progress. A few of the clips deal more with nutrition and this is the first one.
Clearly, I’m no Bobbie Flay, however, you really don’t need to be to make a quick and healthy breakfast. By no means does this dish need to be an omelet. You could simply throw the primary ingredients, eggs, milk or water, veggies into a bowl, whisk them up, pour them into a pan and stir them around until the eggs are cooked through. Call it a messy omelet or a veggie scramble and you are good to go. The key is to get these healthy nutrients into you body; it doesn’t have to look fancy.
